Super easy, super quick weeknight meal ticking all the nutritional boxes to make a healthy meal.
2 Chicken Breasts, sliced into about 5 long pieces each.
1tsp chilli flakes
1 tbsp dark soy salt reduced
1/2 large lime juice and rind
1 cup cauliflower florets
1 cup green beans
1 small sweet potato, sliced into rounds
1 tbsp coconut oil
1 tbsp dried rosemary
Line 2 trays with baking paper. Set oven to 180 degrees.
Mix the chicken in a bowl with chilli flakes, soy and lime juice and rind.
Scatter in one tray and set aside.
On the second tray lay the cauliflower, sweet potato rounds and green beans and toss with the oil and rosemary.
Place both trays in preheated oven for 25-30 minutes.
Divide and dish into two serves.
