Protein Anzac Cookies

FullSizeRenderJust in time for Anzac day with an added hit of protein.
Vegan recipe.

 

PRODUCE:

1/2cup almond meal
1/2cup rolled oats
1tsp maca
1scoop vegan vanilla protein powder
1tbsp chia seeds
2tbsp coconut unsweetened
1tsp coconut sugar
1/4cup coconut oil
3tsp rice malt syrup/organic honey or organic maple syrup
Pinch of baking powder
COMBINE all ingredients.
Line a baking tray with baking paper and roll into balls for cookies. I made 6 large ones.
Bake at 180 degrees for 15 minutes.
YUM!

  1. Believe it or not but I’d never had Anzac Cookies up until last year, but it was an instant favorite. I’ll eat any cookie with oats to be honest, they’re just my favorite. I love how crunchy these kinds of cookies are. Cheers for the recipe, and I dig the added protein!
